1/4 cup water

3/4 cup canned pumpkin
3 eggs
1/4 cup sugar
1 tsp vanilla extract
1/2 tsp cinnamon
Pinch of ground allspice
1 cup milk

Directions:
Directions:
Position rack in center of oven and preheat to 325º.
Stir 2/3 cup sugar and 1/4 cup water in heavy small saucepan, over medium heat until sugar dissolves. Boil until mixture turns amber colored. Swirl pan occasionally. Immediately, divide caramel among 6 1/2 cup ramekins or custard cups.

Whisk pumpkin, eggs, sugar, vanilla, cinnamon, and allspice in a large bowl. gradually whisk in milk. Divide mixture among 6 cups.

Place cups in a large baking pan . Add boiling water to pan to come halfway up sides of cups. Bake until flan is set, about 55 minutes.

Cool at least 8 hours and up to 2 days. When ready to serve, run small knife around edges of cups to loosen. Turn flan out onto plates to serve.
