1 cup flour- can use white and whole wheat mixture
1 cup oatmeal flakes (uncooked)
1/2 cup firmly packed brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup plain nonfat yogurt
4 tbsp canola oil
1 large egg
1 tsp vanilla extract
1 cup fresh or frozen blueberries
1 tsp grated lemon peel

Directions:

Preheat oven to 425 º. Spray 12 cup muffin pan with baking spray.
Blend together flour, oats, brown sugar, baking powder, baking soda, and salt in a large bowl.
Stir together yogurt, oil, egg, and vanilla in a small bowl.
Pour yogurt mixture into the center of dry ingredients, stir until just blended. Do not overmix. Gently fold in blueberries and lemon peel.
Divide the batter evenly between prepared muffin cups. Bake 12- 14 minutes, or until a wooden pick inserted in the center comes out clean.
Cool 5 minutes in the pan, then remove the muffins from the pan and cool on a wire rack.
