5-6 potatoes
4 small pickles, finely chopped
4-5 hard boiled eggs, peeled and chopped (reserve some slices for topping
1 cup miracle whip
2 tbsp mustard
1 tbsp pickle juice
1/2 tsp onion powder or 1/2 c finely chopped onion if you like onions
1 1/2 tsp salt
1/4 tsp pepper
paprika (for garnish)

Directions:
Boil the potatoes until fork tender (about 15 minutes). Pull them out and put them under cold water until they are cool to the touch. Peel the skins off and chop up into half inch cubes. Finely chop pickles, eggs, and onions (if desired). Mix together in a large bowl the miracle whip, mustard, pickle juice, onion powder (onions), salt, and pepper. Carefully fold in the remaining ingredients. Garnish with sliced hard-boiled eggs and sprinkled paprika.
