½ c. butter softened
½ c. vegetable oil
2 c. sugar
4 large eggs
1 ½ tsp vanilla
2 ½ c. flour
⅓ c unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
½ tsp salt
¾ c buttermilk (or ¾ c milk mixed with 1 ½ tsp cream of tarter)
2 c grated zucchini
¾ c chocolate chips

Coat a large bundt pan with cooking spray and dust with flour. Heat oven to 350. In a large mixing bowl, combine butter, oil, sugar, eggs. Beat together with an electric mixer at medium speed for 2-3 minutes. Add vanilla and beat briefly.

In another bowl add flour, cocoa, baking powder, baking soda, and salt. Whisk together. Stir about 1/3 of dry ingredients into creamed mixture, until evenly blended. Add half of milk and stir again until blended. Continue mixing in this fashion, adding another third of dry ingredients, then the rest of the milk and finally the remaining dry mixture.

When the batter is evenly mixed, fold in grated zucchini and chocolate chips. Pour batter into bundt pan. Bake for 45-50 minutes, until toothpick inserted comes out clean. Cool for 20 minutes.

Drizzle an icing mixture over top. (powder sugar, milk and butter and vanilla-very thin & runny)
