2 pounds hamburger
4 tablespoons taco seasoning, divided
1 can (28 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
2 cups chicken broth
1 large sweet potato, peeled and diced
1/2 cup diced onion
1 large green bell pepper, diced
1 can (14 ounces) kernel corn, drained (or 1 package frozen corn)
1 can (14 ounces) black beans, drained and rinsed
1 small jalapeno, minced (seeds removed)
1 tablespoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/2 cup uncooked quinoa

Directions:

Brown and drain hamburger. Add 2 tablespoons taco seasoning. Transfer to slow cooker. Add the remaining ingredients except for the quinoa. Stir everything until combined. Cook on low for 7 hours or on high for 4.

Stir in quinoa. Cook for 1 hour on low or 30 minutes on high.
