Ingredients: 6 Idaho Potatoes
4 oz Cream Cheese, cut into chunks
4 Cloves Garlic
1 can Evaporated milk
6 Tbsp butter
Fresh chopped Chives
Salt and Pepper to taste (I like to use Course Ground Pepper)

Directions: |
Directions:Peel and boil potatoes in water until done (stick with a fork and if the potato breaks apart....they are done)
While potatoes are boiling, peal and slice the garlic and saute in a small skillet with 1 Tbsp butter, until garlic is a golden brown.
Once potatoes are done, drain from water and place in a large mixing bowl. Mash with a potato masher or a large fork.
Add Garlic, Cream Cheese, 2 Tbsp butter and a tad of the Evaporated milk, (about 1/4 cup). Beat with an electric mixer until well mixed, adding small amounts of additional Evaporated milk until desired creaminess is reached.
Top with remaining butter squares and chives before serving. |

*** Growing up these are the only mashed potatoes my kids ever ate. I had never made "Instant" mashed potatoes. When they would have friends over for dinner, their friends would say.."Why do these taste funny?" Poor kids.....they had Never had Fresh, Real, Mashed Potatoes!!
