Potato Souffle' - In Ramekins Recipe

Ingredients: 2 Tbsp butter + xtra for greasing 3 Tbsp bread crumbs for coating the ramkins 1 Lg potato, baked with peel on 1⅓ cups grated cheddar cheese 1/3 cup Parmesan cheese, grated 1 Tbsp fresh chives, chopped 2 eggs 6 Tbsp milk Paprika for garnish

Directions:Pre-heat oven to 450º
Place a baking sheet in the oven to heat up
Butter 4 ramekin dishes and dust with bread crumbs
Peel the baked potato and place in a medium bowl. Use potato masher to mash well.
Grate the cheese and separate the egg yolk from the egg white. Add cheese, chives, black pepper and egg yolks over the mashed potato. Stir to combine
In a small sauce pan, warm the milk and butter until the butter melts and pour over the mashed potato mixture.
Whisk egg whites with an electric mixer until stiff peaks form. Gently fold the egg whites into the potato mixture.
Fill the prepared ramekins with potato mixture and sprinkle with paprika on top.
Place the ramekins in the oven on the preheated baking sheet and bake 15-17 minutes until puffed and golden brown. |

Notes: This is a very light and tasty potato dish. I like to serve this as a side dish with Steaks or Pork. It's a nice change from a regular baked potato and it won't fill you up too much so you can enjoy more of your main beef or pork dish.
*** If you like sweet potatoes this same recipe can be done using a sweet potato.
