1 (15 oz.) can of salmon , pink or red
8 oz. cream cheese - softened
1 T. lemon juice
3 T. finely chopped onion
2 tsp. horseradish
¼ tsp. salt
¼ tsp. hot pepper sauce
¼ tsp. Worcestershire sauce
½ cup chopped walnuts
¼ cup fresh chopped parsley

Open the salmon into a strainer and drain. Take out any skin and bones. (Small bones are ok and add calcium). Mix the salmon and cream cheese together well. Add the lemon juice, onion, salt, pepper, horseradish, and worcestershire sauces, stiring until well blended. Using a spatula, scoop the mixture onto saran, shaping it into a ball using the saran. Cover well with more saran and refrigerate for at least 2 hours. Once chilled, remove from saran wrap and roll the salmon ball in the walnuts and parsley mixed together on a plate. At this point it can be placed on a serving dish, covered and refrigerated until ready to use. Make sure it's well chilled when served.
