Carrot Cake


Ingredients:

2 cup sugar
¾ cup applesauce
¾ cup oil
1 cup white flour
1 cup wheat flour
2 tsp. cinnamon
2 tsp. soda
½ tsp. salt
1 TBS vanilla
3 cups grated carrots
1 cup nuts (optional)

Directions:
Directions:
Cream sugar, applesauce and oil. Mix together dry ingredients and add to creamed mixture. Add vanilla. Fold in carrots and nuts.

Bake at 350 for 35 min- 60 min…depending on pan. I like to make in 11 X 15 jelly roll pan (35 min.)
 

Cream Cheese Frosting

8 oz. cream cheese
1/2 cup butter
4 cups powdered sugar
2 TBS vanilla

Directions:

Cream cream cheese and butter. Whip in powdered sugar. Add vanilla.
