4 large eggs
handful fresh parsley
handful grated cheese
salt & pepper
4 Tbsp. olive oil
1 onion, finely chopped
1 clove garlic, minced
4 small zucchini, trimmed & diced

Directions:
Directions:
In bowl, whisk together eggs, parsley, cheese, s& p, set aside.
In large omelette pan, heat 3 Tbsp. of oil over med. heat. Add garlic & onion and cook stirring for 5 to 10 min. until lightly browned. Add zucchini and cook another 2 min.
Pour in egg mixture, shake pan to settle and cook for about 5 min. until bottom is lightly browned. Loosen side and shake pan to loosen bottom, then cook 2 more min.
Invert pan on plate and then slide out the frittata. Add 1 Tbsp. of oil to the pan and reheat. Slide the frittata back into the pan, unbrowned side down. Cook for another 2 to 3 min. Serve warm or room temp.
