Dressing:
1 cup pineapple juice
½ cup sugar
3 Tbsp cornstarch + 2 Tbsp. water
Juice of 1 lemon (or can substitute white vinegar)
1 cup whipped cream (or Cool Whip)

Drain 1 small can of pineapple and if it doesn't make 1 cup, add water or the juice from a can of
mandarin oranges to make 1 cup. Reserve fruit for the salad. Place juice in a saucepan, add sugar and bring to a boil.

Make a paste of the cornstarch and water; slowly add to boiling mixture and stir until thick and smooth. Cool.

When cool, add juice of one lemon. Fold in 1 cup sweetened whipped cream.

Sweetened Whiped Cream:
1 cup heavy cream
2 Tbsp confectioners sugar
½ tsp vanilla

Pour cream into well-chilled bowl, add sugar and vanilla. Beat the cream to desired consistency.

Fruit Salad:
2 cans fruit cocktail
1 can pineapple chunks (small)
1 can Mandarin oranges
Sliced bananas

Drain fruit very well. Mix together and stir in dressing. Refrigerate until ready to serve.

Susy: LaRue was a dear friend of Vernie's, and we grew up enjoying this delicious salad. It's already passed down to the next generation. Melanie makes this every Thanksgiving. It's her favorite!
