1 lb. green beans, trimmed
4 TBSP chopped walnuts
4 TBSP finely chopped parsley
4 TBSP finely chopped red onion
4 tsp. olive oil
2 tsp. red wine vinegar
2 tsp. Dijon mustard
Salt and Pepper

Directions:
Steam green beans until tender. Transfer to a serving bowl.

Toast walnuts in a dry skillet over medium heat about 2 minutes. Transfer to a small bowl to cool. Add parsley and red onion to the walnuts and stir to combine.

In another small bowl whisk together the oil, vinegar and mustard. Toss the dressing with the green beans, top with the walnut mixture and season with salt and pepper. Serve warm or at room temp.
