1 lb. sweet Italian sausage
1 lb. hot Italian sausage
1 lb. ground beef
1 c. finely chopped onion
4 cloves garlic, crushed
1/4 c. sugar
1 tbsp. salt
1 tbsp. dried basil leaves
1 1/2 tsp. fennel seed
1/2 tsp pepper1/2 c. chopped parsley
2 cans ( 2lbs. 3 oz.) Italian style tomatoes
4 cans (4 oz.) tomato paste
1 pkg. curly lasagna noodles
1/2 c. grated parmesan cheese
1/2 lb. shredded mozzarella cheese

Ricotta Filling
3 containers (15oz.) ricotta cheese
2 eggs
1/2 lb. shredded mozzarella cheese
1 tsp. salt
1/4 c. chopped parsley

In a large bowl, combine ricotta, eggs, mozzarella, salt and parsley. Mix well and let set to room temperature.

Remove sausage meat from outer casing and coarsely chop the meat. In 5 qt. Dutch oven over medium heat sauté sausage, beef, onion until well browned, about 20 minutes. Add sugar, t tbsp. salt, basil, fennel, pepper and chopped parsley, mix well. Add tomatoes (do not drain), tomato paste and 1 c. of water, mashing the tomatoes with wooden spoon. Bring to boil reduce heat, cover and simmer for 1 1/2 hours, stirring occasionally.

Cook lasagna in 8 qt. pot with 5 quarts water and tbsp. salt, bring to boil and in noodles for about 10 minutes or until tender, drain in colander and rise with cold water, dry on paper towels.

Pre heat oven to 375º

using 12 x 15 dish, layer bottom with meat sauce, then layer of Ricotta filling, sprinkle grate parmesan and mozzarella and repeat layers with cheese on top. Cover with foil and bake 40 minutes, remove foil and bake 10 minutes longer until bubbly. Let rest 5 minutes before cutting.

You can easily make 3 smaller pans and freeze a couple. A lot or work and costly but better than any restaurant. Mama would only make about once a year. Marybeth started making this at Christmas time and sharing with everyone. She mastered the recipe.
