1 1/2 lb. red candied cherries, chopped
1 1/2 lb. green candied cherries, chopped
1 1/2 lb. candied pineapple, chopped
2 lbs. chopped dates (DO NOT SOAK DATES with the above ingredients)
3 qt. chopped pecans

1 lb. butter
1 lb. brown sugar
3 large eggs

1 tbsp. vanilla
1/4 c. whipping cream

7 c. self rising flour
1/2 tsp. salt
3 tsp. baking soda

Directions:
Directions:
Soak cherries and pineapple in rum for several days.

Preheat oven to 325º

Mix butter, sugar and eggs until creamy, add vanilla and whipping cream and mix. Last mix together the flour, salt, baking soda and slowly add and mix well.

Drain the fruit and add to batter, dates and pecans, very thick batter use the paddle attachment to mix.

Drop by the spoonful and bake 15 minutes or until edges light brown.

Mama only made a Christmas time but would freeze some to have later in the year. Never soak the dates they will breakdown in the rum.
