2 c. cake flour
1 1/2 c. granulated sugar
4 tsp. salt
1/2 c. unsalted butter, cut into pieces
1/2 c. plus 3 tbsp. vegetable oil
1/2 c. finely chopped walnuts
1 (3 1/2 oz.) package instant vanilla pudding mix
1/2 c. milk
4 eggs
1/2 c. Whaler Vanilla Rum (Hawaiian-style rum)
1 tsp. vanilla extract

Soaking Glaze
1/2 c. butter (unsalted)
1/4 c. water
1 c. granulated sugar
1/2 c. Whaler Vanilla Rum

Directions:

Preheat oven to 325º. Grease and flour standard size Bundt pan or spray generously with good flour added baking spray.

Mix cake flour, sugar, baking powder and salt in bowl. Add chunks of soften butter and 3 tbsp. of vegetable oil. Continue mixing on low/medium speed until mixture like fine gravel. Add the pudding mix. milk, eggs, remaining oil, rum and vanilla. Raise the mixing speed to medium (use paddle for lighter batter) mix well scraping bowl often, batter should be smooth.

Sprinkle chopped nuts on bottom of pan, pour batter over nuts and bake for 55 minutes or until cake tester comes out clean and cake springs back.

Prepare Rum soaking glaze by combining butter water and sugar in small saucepan and bring to a boil. Reduce to simmer and cook until sugar is dissolved and syrup is well combines and a little thicker.

Remove from heat an stir in Rum.

While cake is cooling upside down in the pan, pour syrup over the cake, use toothpick to poke holes allowing the rum to soak down into the cake. Allow the cake to cool completely in pan before turning it out onto platter.

You can also use 2 7inch angel food pans but cut cooking time to 25 - 30 minutes and do not fill over 1/2 way as it will rise above the pans.

We all fell in love with the Tortuga Rum cakes after going to Grand Cayman on a cruise with mama and papa. Secret is the Whaler Vanilla Rum, closest to Tortuga Rum.
