1 pint of whipping cream, whipped stiff
⅛ cup mayonnaise
⅛ cup cream cheese, softened
¼ cup + 2 Tbsp Eagle brand condensed milk
3 Tbsp lemon juice
¼ tsp salt
½ cup crushed pineapple
½ cup chopped nuts
1 cup drained fruit (fruit cocktail, or mandarin oranges)
Garnish - additional whipped cream, shredded cheddar cheese and/or shredded coconut

Directions:

Butter a freezer tray (for easy removal). Whip whipping cream until stiff; add mayonnaise, cream cheese, Eagle brand milk, lemon juice and salt. Blend well and place in a freezer tray. Check mixture from time to time until it is partially frozen. Remove from freezer and mix in crushed pineapple, nuts, and drained fruit. Place back in freezer tray and freeze until solid. Remove from tray and wrap (roll) in several thicknesses of wax paper, then in foil. Put back in freezer till ready to serve. When serving, cut into slices, top each serving with additional whipped cream and shredded cheddar cheese. A sprinkle of shredded coconut is good, too.
