2 tsp Canola oil, plus more for greasing racks
2 Cups Panko crumbs
2 tsp Lemon Pepper
1 oz Parmesan cheese, grated
1/2 Cup whole buttermilk
1 Large egg
1/2 Cup Flour, all purpose
3/4 LB fresh green beans, trimmed
Creamy Dijon Mustard

1. Preheat oven to 450º

2. Grease 2 wire racks and set over baking sheet

3. Stir together panko, oil and lemon pepper in a shallow bowl, until blended

4. Stir in cheese

5. Whisk buttermilk and egg in a second shallow bowl

6. Place flour in a third shallow bowl

7. Dredge each green bean in flour and then dip it into the egg mixture.

8. Coat with panko mixture, pressing gently to adhere

9. Arrange breaded green beans in a single layer on the wire racks

10. Bake about 15 minutes until golden brown

11. Serve hot with mustard for dipping

Tip: To keep fingers from getting sticky while dredging, use 1 hand for dipping beans into egg mixture and the other for coating in the dry ingredients.
