Sweet Potatoe Pie Recipe

Ingredients: 4-5 medium sweet potatoes, peeled, sliced and boiled/cooked 6 tbsp. salted butter 2 c. granulated sugar 1 tsp. real Watkins vanilla 3 eggs 1 (5 oz.) evaporated milk or ½ can of big one 2-3 dashes of cinnamon 2 (9 oz.) frozen Pillsbury pie crusts

Directions:Preheat oven to 350º.
Before pouring mixture into pie crust, bake crusts in oven for five minutes. Remove from oven and let cool.
Peel potatoes, cut into quarter size pieces or slice thinly and boil until soft (use fork to test for tenderness).
Drain and put potatoes into mixing bowl.
Add butter while potatoes are still hot. Then add sugar and vanilla. Taste for sweetness and add more sugar if desired.
After desired sweetness, add evaporated milk and two or three dashes of cinnamon.
Taste and add more milk and cinnamon until desired taste is acquired. Add eggs.
Mix for 10 minutes and pour into cooled pie crusts. Bake for 1-1¼ hours.
Let cool on counter for 2 hours before serving. |

Notes: This is one of my favorite pies. I started off using a recipe from a cookbook and loved the taste the evaporated milk added. I made it my own by using my own measurements but the same ingredients, except the nutmeg. I eliminated it. This is a true Mississippi sweet potatoe pie!
