1 yellow cake mix
1 large egg
1/2 cup melted butter
1 box powdered sugar
2 large eggs
1/2 teaspoon lemon extract
1 package cream cheese (8 oz)

Directions:
Directions:
Combine cake mix, 1 egg, and butter and mix on low speed only until
blended. Press into greased 13 x 9 pan.

Mix powdered sugar, 2 eggs, lemon extract, and cream cheese on low speed
until thoroughly mixed. Pour over cake mix base.

Sprinkle with coarse sugar if desired.

Bake 40-45 min. at 350º.

Cake may not look done but will set after baking.

This is even better the second day!

One of our family dessert staples, circa 1980. Some of the kids prefer to leave out the lemon extract and add cinnamon instead. I will often beef UP the lemon by using a lemon cake mix as well as the extract. This dessert is good eaten right out of the hand, and the "edge pieces" are usually fought over.
