½ c. butter, melted
1 c. self-rising flour
1 c. pecans, chopped fine
1 8 oz. cream cheese, softened
1 c. powdered sugar
1 12oz. Cool Whip©, divided

3 small packages instant chocolate pudding mix
4 c. milk

1 - 2 c. pecans, chopped

Directions:
Directions:
Mix together butter, flour and 1 cup chopped pecans.
Press with fingers into bottom of 9"X13" pan.
Bake at 350º for 15 minutes or until lightly browned. Then chill in the fridge.

Mix the cream cheese and powdered sugar until there are no lumps; add 1 cup Cool Whip© and mix together well.
Spread over cooled crust and let set in refrigerator overnight.

Mix together pudding mixes and milk until they start to thicken.
Spread over cream cheese layer.
Spread on remaining Cool Whip and sprinkle with the 1 to 2 cups chopped pecans.
Refrigerate and serve cold.

This lusciousness came from Judi Leake at the church in Middlesboro, KY. My daughter Christine passed it on to me. The original recipe calls for self-rising flour which most southern cooks have on hand. Some day I'm going to try using regular flour to see what the difference would be. And, no, I don't know why she specified pressing the crust mixture into the pan with your fingers.
