5-6 4oz servings of white fish
1 can of tomato sauce
1 can of diced tomato
1 chopped onion
1 chopped green pepper
1 TBS olive oil
2 tsp Cajun seasoning
1 tsp salt

Directions:
Directions:
Sauté onion and green pepper in olive oil 5 min. Add tomato sauce and diced tomatoes. Mix in seasonings and salt. Nestle fish pieces in sauce, bring to a boil, cover and reduce to simmer. Cook 20 min. Serve over rice.

Captain Herman in the Cayman Islands shared this recipe with us. We would prepare this with any type of fish we caught on his boat. Some years we even cooked Barricuda this way.
HINT when checking if the Barricuda is toxic, cut a piece of meat off and feed it to ants, if the ants leave it alone, it is too toxic to cook.
