2 cups unsweetened applesauce
3/4 cup molasses
1/3 cup vegetable oil
3 eggs
3 cups all purpose flour
1 1/3 cups Splenda Granulated
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 teaspoons ground ginger
2 teaspoons cinnamon
1 1/5 teaspoons ground cloves

Directions:
Directions:
Preheat oven to 350º degrees F. Spray Bundt pan with PAM and set aside.

Pour applesauce, molasses and vegetable oil into a large mixing bowl. Add eggs and stir well.

Blend remaining dry ingredients in a separate bowl. Mix well.

Add dry ingredients to the applesauce mixture and stir well.

Pour the batter into the bundt pan. Bake for 50-60 minutes or until wood skewer comes out clean.

Cool cake in the pan on a wire rack for about 20-30 minutes then invert onto a serving plate.

Serve warm or cool. The cake can be sprinkled with powdered Splenda (1/2 cup in a blender, cover and blend on high 30-40 seconds) or sliced and topped with Cool Whip sprinkled with a touch of cinnamon.

After making the uber chocolate brownies for so long, I wanted to change up a bit for family members who couldn't (or just really shouldn't) have all that sugar. Banana breads, gingerbread and applesauce cakes have long been part of my baking history. So when I started to experiment with using Splenda, this was a perfect fit. Also, I love the look of the bundt cake and the smell of the baking cake is sooo nice. Fills the house.

And like the brownies, I alter the ginger, cinnamon and ground clove measurements to suite the crowd. These measurements are pretty standard. For some I almost double the spices.
