Cowboy Caviar Recipe

1 can each (drain):
black beans
pinto beans
kidney beans
blackeyed peas
corn (I usually use frozen)

2 cans chopped jalapenos

chopped veggies:
1 med red onion
1 red pepper
1 yellow pepper
1 green pepper
3-4 stalks celery

1/2 c. sugar
1/2 c. cider vinegar
1 c. veg oil

Drain canned veggies and chop the rest of the vegetables. Mix together.

For Marinade:
Heat together on stove until sugar dissolves. Cool. Pour over all ingredients. Let sit 4-6 hours. Drain before serving.

Serve with Frito scoops
