2 cups almond flour
1/2 tsp baking soda
1/2 tsp salt
1/4 honey
1 T vanilla
3 large eggs

Optional glaze:
3 T honey
2 T melted butter
1/4 tsp vanilla
Mix all ingredients together. Should be runny and a bit warm. Let it cool to room temperature and drizzle over the top/sides of the cake.

Preheat oven to 300°F.
Prepare a small, square baking dish with parchment paper on the bottom and oiled sides.
Mix almond flour, baking soda and salt in a bowl.
Add the honey, eggs and vanilla and whisk together until smooth.
Pour into the prepared baking dish and bake until a knife comes out clean, about 40 minutes, let cool.

Optional:
Top with sliced fruit, yogurt or SCD whipping cream yogurt, whipped with some honey and a little vanilla. Can use this recipe to make cupcakes.

To dehydrate cakes for travel, cut into small squares and bake at 170°F for a few hours until they get dry and crisp. Vacuum pack and freeze until ready to travel.
