1 c. quick cooking oatmeal
1½ c. boiling water
1 c. brown sugar
1 c. white sugar
½ c. shortening or margarine
2 eggs
1⅓ c. flour, not self-rising
1 tsp. baking soda
½ tsp. salt
½ tsp. cinnamon

Directions:
Directions:
In small bowl, pour boiling water over oatmeal and let stand 20 minutes.

In large mixing bowl, cream together sugars and shortening. Add eggs, one at a time, beating well after each.

Mix the 4 dry ingredients together.

Add the flour mixture and the oat mixture alternately to the creamed mixture, ending with the flour.

Pour into greased 13"X9" pan, bake at 350º for 35 minutes.
 

For Topping:

6 tbsp. butter
¾ c. brown sugar
¾ c. evaporated milk
1 tsp. vanilla
1 c. coconut, flaked or shredded

Cream all ingredients together well. Spread over hot cake after cake is baked. Place under broiler to melt and slightly brown.
