2.5 lbs boneless, skinless chicken breast or enough to line bottom of 9x13 pan.
2 T olive oil
3 cloves garlic, minced
1/2 t salt
1/2 t balsamic vinegar
1 t hot red pepper flakes
2 c marinara sauce
1/4 c fresh basil, chopped, or 2 T dried
1 c mozzarella, shredded, divided
1/2 c Parmigiano-Reggiano, grated (freshly recommended, divided
1 5 oz pkg. garlic croutons

Directions:

Heat oven to 350º. Spread olive oil and garlic in 9x13 casserole dish. Sprinkle wotj pepper flakes and 1.4 t salt.

Lay chicken breasts in casserole in single layer. Only add as many as will fit in a single layer. Sprinkle with remaining salt and drizzle with balsamic vinegar.

Pour marinara sauce over all the chicken, then sprinkle chopped basil followed by half the mozzarella and half the P-R. Evenly spread croutons over the cheese, then cover again with the remaining two cheese.

Bake for 35 minutes or until top is golden and the chicken cooked through.
