4 tbsp Olive Oil
1\3 cp chopped Green Pepper
1\3 cp Chopped Onion
8 Eggs
2 tbsp Mayonnaise
1\2 tsp Black Pepper
1\2 tsp Salt
1\8 tsp Cumin
1\4 cp Shredded Pepper Jack Cheese
1\3 cp of diced Tomatoes

Directions:
Directions:
1. Mix all ingredients together except Olive Oil and cheese
2. Heat Olive Oil in frying pan over medium heat
3. Add egg mixture to heated pan
4. Keep stirring until eggs are done
5. Add cheese over top of eggs and remove from pan once cheese is melted
