2 tbs sesame oil
2-3 tbs canola or vegetable oil
3/4 to 1 pound boneless skinless chicken breasts
3 green onions, trimmed and sliced into thin rounds
2 large eggs
4 cups cooked rice
5 tbs low-sodium soy sauce
2-3 tbs sesame seeds
1 medium sweet onion (diced)
2 cups carrots (matchstick cut)

Directions:
Directions:
1. To a large non-stick skillet or wok add 1 tbs oil, carrots, and sweet onion. Cook until carrots and onions become tender.
2. While carrots and onions are cooking - in a separate cup combine eggs with 1 tbs soy sauce and 1 tbs sesame oil. Beat eggs sauce and oil and set aside.
3. Remove cooked carrots and onion from wok and place in large bowl. Set aside.
4. Lower temperature of wok to a simmer. Pour egg mixture into wok and scramble until egg is fully cooked. Chop into smaller pieces. Add cooked egg mixture to bowl with carrots and onion.
5. Add remaining oil (or just enough to cook chicken) to wok and add chicken. Cook until chicken is cooked all the way through and has slight brown edges.
5. Once chicken is fully cooked, add 3-4 tbs soy sauce, 1 tbs sesame oil, sesame seeds, and green onions to wok. Mix all together and let simmer for 4-5 minutes.
6. Combine rice, egg/carrot/onion mixture in wok. Add additional soy sauce as desired. Let simmer for 5-10 minutes and enjoy.
