1 1/2 onion, chopped
1 medium green pepper, chopped
1 rib celery, chopped
1-3 cloves garlic, crushed
2 jalapeņo, diced one for cooking the other to sprinkle on raw
3 tablespoons oil
3 lb beef
4 cans of kidney beans, I use two dark, two light
8 tablespoons chili powder
1 tablespoons cumin
2 teaspoon salt
1/2 teaspoon Tabasco
8 oz beer
1 1/2 cup water or more depending how thick you like it
14 oz tomatoes
8 oz tomato sauce
6 oz tomato paste
4 oz green chiles
1 bay leaf
2 tsp garlic salt

Directions:
Directions:
Saute 1st 5 ingredients in oil, add beef and beans
Combine chili powder, cumin, garlic, salt, Tabasco, salt and beer.
Let stand 1-2 minutes. Mix together.
Simmer 3 hours.
