1 1/2 c. flour
1 t. baking soda
11/2 t. baking powder
1/2 t. nutmeg
1/2 t. salt
3/4 t. cinnamon
3 overripe bananas
1 t. vanilla or banana extract
1/2 c. sugar
1/4 c. brown sugar
2 eggs lightly beaten
1/3 c. oil
Topping:
1/3 c. browns sugar packed
2 T. flour
1 t. cinnamon
1 T. butter

Directions:
Directions:
Preheat oven to 400º.In a bowl combine flour, baking powder, baking soda, salt, nutmeg, and cinnamon. In a second bowl combine lightly beaten eggs, sugar, brown sugar, extract, mashed bananas and oil. Do no overbeat. It should be lumpy. Add the egg mixture to the dry flour mixture and mix gently until combined. Make the topping. In a small bowl add the brown sugar flour cinnamon and cut the butter into that with either a pastry cutter or a fork until it resembles small peas.
Put 12 muffin liners into the muffin pan and fill each with the batter. Sprinkle with the topping mix. Bake approximately 15 - 20 min. until the center comes out clean when tested. Cool and enjoy or freeze individually until you want them.
