1 12-oz. can solid white tuna
½ cup diced red onion
1 Tablespoon chopped chives (fresh, preferred)
1 Tablespoon lemon juice
½ teaspoon Kosher salt
½ cup diced tomato
2 medium avocados
1 cup cannellini beans
1 Tablespoon fresh basil
1 Tablespoon extra virgin olive oil
! Tablespoon red wine vinegar
½ teaspoon ground black pepper
4 cups spring mix salad greens

French Bread, sliced into 8 slices, ¼-inch thick
2 teaspoons olive oil

Directions:
Directions:
1. Brush French bread slices with 2 tsp. olive oil and toast in oven.
2. Drain tuna and then place in a medium-sized bowl; flake with a fork.
2. Stir in onions, basil, chives, oil,, lemon juice, vinegar, salt and pepper,
3. Drain and rinse beans; add to tuna mixture.
4. Add chopped tomatoes.
5. Place 1 cup of spring mix salad greens on a plate.
6. Peel and halve each avocado and place one on each plate of greens.
7. Spoon tuna mixture on top.
8. Serve with French bread, toasted.
