2½ cup sifted all purpose flour
½ teaspoon salt
1 cup sugar
2½ cup (1 pound) coarsely chopped candied pineapple
2 cup (1 pound) whole cherries
10 ounces pitted dates, cut coarsely
1 pound candied citrus
2½ teaspoon baking powder
5 eggs
8 cup pecan halves (2 pounds)

Sift flour with baking powder and salt. Add fruits and nix well with the hands to coat thoroughly each piece of fruit. Beat eggs until frothy. Gradually beat in sugar. With hands mix in nuts. Grease two 9 inch springform pans. Line with unglazed brown paper and grease again. Divide dough between pans and press mixture down firmly with the fingers. Bake in preheated slow oven (275 degrees) for about 2 hours. Let cake stand in pans for about 5 minutes. Turn out on racks and pull off brown paper. Cool cake before slicing.
