8 1/2 Tbsp water
8 1/2 Tbsp whole milk
7 Tbsp salted butter
Pinch kosher salt
4 Large eggs
7 oz gruyere cheese, grated

Directions:
Preheat oven to 400º

1. Line baking sheet with parchment paper
2. Bring water, milk, butter and salt to a boil in a large saucepan over medium-high heat; reduce to medium and using a wooden spoon or heat-proof spatula, stir in flour all at once
3. Cook, stirring constantly until flour is completely incorporated, about 5 minutes - Mixture will form a large, slightly firm ball of dough with a smooth and slightly shiny surface.
4. Transfer dough ball to a heavy duty electric mixer
5. Beat at low speed for about a minute
6. Add eggs, one at a time, and beat on low speed until well incorporated after each egg.
7. Add cheese and beat on low speed for 30 seconds
8. Transfer dough to pastry bag, or just utilized a spoon, to make 1 inch balls, 1 inch apart
9. Bake about 20-25 minutes until puffs have risen and sound hollow when tapped

Note: These can be made without cheese or with any cheese you like
