Batter:
1/3 c. Dijon mustard
3 Tbsp. water
2 tsp. Worcestershire sauce
1 garlic clove, minced
1/2 tsp. Italian seasoning

1 c. dry, fine bread crumbs
1 lb. venison loin steaks
2 Tbsp. oil

Directions:
Directions:
Combine all batter ingredients and mix well; place in shallow dish. Place bread crumbs in second shallow dish. Dip loins 1st in batter to coat, then dredge in crumbs.
Place oil in non-stick skillet and cook steaks over medium-high heat. Cook about 5 minutes or until golden brown on both sides. do not overcook and turn only once. Steaks should not be pink in the center.
Serve immediately.
