1 medium-sized white onion, chopped finely
2 Tbsp cooking oil
16 ounces Velveeta cheese, cut into ¾-inch cubes
1½ cups heavy cream, whole milk, or half-and-half (approximately 12oz)
1 large tomato, chopped
1 cup medium or hot Hatch Green Chile or similar New Mexico chile (roasted, peeled, seeded, chopped)
Salt to taste
¼ tsp ground black pepper

Directions:
Directions:
In a frying pan, add about cooking oil and heat over a medium-high heat. Add onion. Constantly turn the onion till translucent. Add tomatoes to frying pan. Turn once or twice, then add to a saucepan with the New Mexico chile, cheese cubes, whole milk, and black pepper. Put over a medium heat and simmer till cheese and milk have melted together thoroughly.
