Ingredients: 10 oz. bittersweet (NOT unsweetened) or semisweet chocolate, chopped 1 c. (2 sticks) unsalted butter, cut into small pieces 5 large eggs 1¼ c. sugar 5 tbsp. all purpose flour 1½ tsp. baking powder

Directions:Preheat oven to 325º. Butter and flour 10" diameter springform pan with 2¾" high sides. (I have used 9" cake pan with good success) Stir chocolate and butter in heavy medium saucepan over low heat until chocolate melts and mixture is smooth. Beat eggs and sugar in large bowl until well blended and beginning to thicken. Sift flour and baking powder over eggs and fold in. Gradually fold in chocolate mixture. Transfer batter to prepared pan. Bake cake 20 minutes. Cover pan with foil. Bake until tester inserted into center comes out with moist crumbs still attached, about 30 minutes longer. Uncover cake; cool in pan on rack (cake will fall as it cools). Cut around pan sides to loosen cake. Release pan sides. Sift powdered sugar over cake; cut into wedges. Can be made 1 day ahead of serving; let stand at room temperature. |

Notes: I discovered this 20-some years ago, and it is a go-to when needing dessert in a hurry. It's quick and easy, and most ingredients are readily available in my kitchen. It is like eating baked fudge, and a very small slice satisfies. I can make it go much further than the 10 servings the recipe states!
