3 Eggs
1 ⅔ c Buttermilk
1 ½ c Flour
1 tsp Baking Soda
1 tbsp Sugar
½ tsp Salt
3 tbsp soft butter/margarine

Directions:
Directions:
Separate eggs into two bowls. Beat egg whites until stiff. Beat rest of ingredients in the egg yolks and then fold in the egg whites. Pour small amounts into hot grease to fry the pancake. May add blueberries, raspberries or chocolate chips to mixture prior to frying for added flavor!

A lot of Sundays were spent at Grandpa and Grandma Latham's after church for breakfast and this is a favorite of all the kids.
