1 lb Italian sausage
1 1/2 tsp red pepper flakes (optional)
1 diced onion
2 tsp minced garlic
8 cups water
3 tbsp chicken base (or 8 cubes of chicken bouillon)
3-4 potatoes washed and sliced (no need to peel)
2 cans evaporated milk
6-8 oz fresh spinach or kale
4 slices bacon cut in pieces and fried crisp for garnish

Directions:

Fry sausage and pepper flakes until thoroughly cooked. Add onion and garlic and cook until tender, about 5-10 minutes. Add water and chicken base and bring to a boil. Stir in potato slices and cook until soft about 15-20 minutes. Add milk and cook until heated but do not boil. Stir in the spinach or kale. Let heat through and serve. Garnish with bacon pieces.
