Rachel's Italian Lasagna Recipe

12-14 cooked lasagna noodles
½ lb hamburger
½ lb sausage
1 clove garlic
24 oz. tomato paste
18 oz. water
1 tbs garlic salt
1 tsp Italian seasoning
1 (6oz) jar mushrooms
1 (1lb.) container cottage cheese, small curd
1 lb grated mozzarella cheese
½ cup grated Parmesan cheese

Directions:

Brown hamburger, sausage, mushroom, and garlic. Drain. In large skillet empty tomato paste, water, salt, Italian seasoning and mix while heating slowly. Add meat. Simmer about 30 minutes until sauce thickens.

Boil noodles according to directions on box, then lay out on wax paper to cool. Preheat oven to 350º.

In 13x9 pan spread one layer of sauce in bottom (about 4 cups), make a layer of 6 noodles overlapping each other. Spread on ½ container of cottage cheese, 8 oz. of mozzarella cheese. Another layer of noodles, rest of the cottage cheese, rest of the mozzarella cheese, then pour sauce over the top. Sprinkle with Parmesan cheese.

Bake at 350º for 30 to 45 minutes.

Of all of Rachel's recipes this is Pop's most requested dish. Pop is pretty picky about his lasagna. He would seldom eat it from a restaurant because it never had a homemade taste. Lots of mushrooms and don't spare the mozzarella. That's the ticket !!
