¼ CUP SUGAR
1 TSP. BAKING POWDER
½ TSP. SALT
3 EGGS
2 CUPS MILK
1 TSP. VANILLA
OIL FOR FRYING
POWDERED SUGAR

HEAT OIL IN FRY PAN TO AT LEAST 375º. SIFT TOGETHER FLOUR, SUGAR, BAKING POWDER AND SALT. BEAT EGGS WITH FORK. ADD MILK AND VANILLA AND BEAT IN DRY INGREDIENTS JUST UNTIL BATTER IS FAIRLY SMOOTH.

USING WIDE-MOUTHED (1/2") FUNNEL, COVER END OF FUNNEL WITH FINGER AND POUR IN 1/4 CUP BATTER. OVER THE OIL, RELEASE FINGER, USING A WIDE CIRCULAR MOTHION. FRY, TURNING ONCE, UNTIL GOLDEN BROW - 1-2 MINUTES EACH SIDE. DRAIN AND SPRINKLE WITH POWDERED SUGAR.

At Lagoon Amusement Park in Salt Lake City, they use a metal form (coffee can would work) and drizzle the batter in it. As soon as the sides set up, pull the can off and finish frying. Experiment with the amount of batter that is drizzled in.
