4 CUPS FLOUR
2 TSP BAKING POWDER
1 TSP. SALT
¼ CUP SHORTENING
1½ CUPS HOT WATER

WHISK FLOUR, SALT AND BAKING PWDER TOGETHER IN LARGE MIXING BOWL. MIX IN SHORTENING WITH FINGERS UNTIL IT RESEMBLE CORNMEAL. ADD WATER AND MIX UNTIL DOUGH COMES TOGETHER. PLACE ON LIGHLY FLOURED SURFACE AND KNEAD UNTIL SMOOTH AND ELASTIC. DIVIDE DOUGH INTO 24 EQUAL PIECES AND ROLL EACH PIECE INTO A BALL.

PREHEAT GRIDDLE OR A LARGE SKILLET OVER MEDIUM-HIGH HEAT. USE WELL-FLOURED ROLLING PIN TO ROLL DOUGH BALL INTO THIN, ROUND TORTILLA. PLACE ON GRIDDLE OR SKILLET AND COOK UNTIL BUBBLY AND GOLDEN. FLIP AND CONTINUE COOKING UNTIL GOLDEN ON THE OTHER SIDE. PLACE COOKED TORTILLA IN A TORTILLA WARMER OR BETWEEN PAPER TOWELS. CONTINUE ROLLING AND COOKING THE REMAINING DOUGH.
