2 c. water
2 tsp. coconut oil or MCT oil
1 t. salt

In a 2 quart saucepan with a tight-fitting lid bring two cups of water to a boil. Pour in one cup of rice, 2 t. of coconut oil or MCT oil and 1 t. of salt. Stir. After the water mixture returns to a boil, cover and lower to a simmer. Cook about 20 minutes or until water is absorbed. If it's not cooked enough add a little more water and simmer 5 minutes longer. The low-cal magic happens when the rice is chilled overnight and reheated. Waiting until the next day makes the rice digest differently and you can eat twice as much per serving -1 cup instead of a 1/2 a cup. Guilt-free rice! Enjoy!
