1 package yellow cake mix with pudding
1 can (20 oz.) crushed pineapple (in own juice)
¾ C. sugar
2 packages (3¼ oz.) instant vanilla pudding
3 C. milk
1 C. heavy or whipping cream
¼ C. powdered sugar
1 t. vanilla extract
¾ C. flaked toasted coconut

1. Bake cake in 9 X 13 inch baking pan according to package directions.
2. Meanwhile, in medium saucepan, combine pineapple with its juice and sugar; cook over medium heat, stirring occasionally, until thick and syrupy, about 20 minutes.
3. When cake is done, remove from oven and pierce top with a fork at 1-inch intervals. Pour on pineapple mixture and spread evenly over cake. Cool completely.
4. In medium bowl combine pudding mix with milk; blend until thick. Spread over cake.
5. In medium bowl beat cream until soft peaks form. Add confectioners sugar and vanilla; continue beating until stiff. Spread over cake.
6. Refrigerate 24 hours. Before serving, sprinkle with coconut.

The ultimate dessert! I know the calories are rediculous, but it's a "must try" anyway. You can always re-start your diet on "Monday"! Enjoy the week-end!!!
