¼ C. firmly packed light brown sugar
½ C. unsalted butter
1 large egg
2 T. vanilla extract
¼ C. coarsely chopped dried dates (I just use raisens)
1 C. all-purpose soft wheat flour
½ t. baking soda
½ t. salt
¼ t. baking powder
1¾ C. semisweet chocolate morsels
¾ C. coarsely chopped walnuts
½ C. sweetened flaked coconut
½ C. plain granola

1. Preheat oven to 350º F. Beat brown sugar and butter at medium speed with an electric mixer 3 minutes or until creamy. Add egg and vanilla, beating well. Stir in dates (raisens); let stand 5 minutes to soften dates. Beat at high speed 3 minutes or until very light brown and creamy. Whisk together flour, baking soda, salt, and baking powder in a small bowl; add to butter mixture, beating until blended. Stir in chocolate morsels, and remaining ingredients.

2. Drop large (3-Tbsp.) scoops of dough 2 inches apart onto lightly greased baking sheets. Pat dough down. (One good pat is sufficient. Don't press flat, or the cookie will come out too thin. It tastes best a little thick!)

3. Bake at 350º for 15 minutes or until lightly browned. Cool on baking sheets 15 minutes. (These are gooey in the middle and need time to set.) Transfer to wire racks.

Sweet P's (Barbeque and Soul House is located in Tennessee) owner, Kadra Parkman, got this recipe from her aunt Carol Starling, who was a trip chef in the Grand Canyon in the '70's. She would bake these cookie before the trips because they're packed full of goodness and would stay fresh for several days.
