Ingredients: 8 ounces semi sweet chocolate (1 1/2 cups chocolate chips) 1/2 cup butter or alternative (slightly less if using coconut oil) 4 eggs 4 tablespoon brown or coconut sugar 2 teaspoons vanilla 1 tablespoon cocoa powder

Directions:1.Preheat the oven to 400ºF. Prepare 4-6oz. ramekins by covering the insides with a thin film of coconut oil, then adding a sprinkle of sugar to coat the film of butter. Shake off excess sugar into the next ramekin until all are coated. 2. In a glass bowl, place the chocolate and butter/coconut oil. Using the "Melt chocolate ,1 cup" setting on the microwave. Note: when you remove the bowl, the chocolate may still look semi solid. Stir the mixture as it should become liquid when the oil and chocolate blend. If necessary, reheat using the same setting but for a less quantity of chocolate- " 2 tablespoons". You do not want to over microwave chocolate. 3. Meanwhile whisk together the rest of the ingredients. When the chocolate is melted, slowly pour it into the egg mixture, whisking as you pour. The batter will thicken as you whisk it together. 4. Fill the ramekins 3/4 full, leaving enough room for the cake to raise. 5. Place the ramekins on a cookie tray for ease in and out of the oven. Place in oven and cook for about 12 minutes. The centre should still be soft and appear more pudding like, while the rim will appear more cake like. 6. To serve, gently invert the ramekin onto a plate that has fruit sauce swirled on it. Garnish with fruit slices. Berries complement the chocolate wonderfully. |

Notes: Entertaining Hint: As this dessert is served almost straight from the oven, before your company arrives, make it ahead to step 5 and refrigerate. Remove from fridge just before your company arrives, Remember to adjust your oven temperature to 400ºF as you sit down to eat, allowing your oven to preheat to the correct temperature. After you have enjoyed your dinner with your guests, pop the cookie tray into the oven. Set the timer for 12 minutes. Clear the table and enjoy the rest of your wine and/or make tea/coffee. Perhaps your guests will sit and linger a few minutes waiting for dessert, but they will be enjoying visiting and will find the wait while worth it when they spoon into the soft, molten chocolate. The Molten Lava Cakes should be soft in the center but may require up to 5 minutes more. How to tell? Each cake should look level around the edge but the middle will be slightly indented. Don't worry- if they are slightly underdone as this will just result in the chocolate being soft and runny. Hmm, delicious!
