Chili Lime Chicken
4 boneless chicken breast halves (about 2 lbs)
2 t chili powder
1 t ground cumin
1 t smoked paprika
1/2 t onion powder
1/2 t garlic powder
3/4 t kosher salt
1/4 t ground black pepper
1/4 t cayenne pepper
2 T olive oil
2 T freshly squeezed lime jiuce
zest of 1 lime
1 t honey

Directions:

In a large bowl or a large ziplock bag, mix dry spices and then stir in the oil, lime juice, zest & honey. Add chicken breasts & flip a few times to evenly coat with the spice rub. Allow the chicken to marinate all day in the fridge or overnight.

Let chicken sit at room temperature for 30 min before grilling. Preheat grill and remove chicken from marinade. Discard marinade.

Grill the chicken over medium heat for 7-8 min per side until it is cooked thru. Remove from heat & allow to sit for 5 min before slicing.

Burrito Bowls
Cook 1 C of rice according to package directions. Allow to rest for 5 min, then divide among 4 bowls. Add chicken. Add other ingredients:
sliced red peppers
sliced avocado
sliced or chopped red onion
greens
corn
black beans
chopped fresh cilantro
shredded cheese
salsa
sour cream
