3-4 oz bulk fresh chorizo
4 gren onions, chopped
2 garlic cloves, minced
1 can (141/2 oz) diced tomatoes, drained
1/2 C pitted gren olives, chopped
1/2 t grated orange peel
1/4 t salt
1/4 t pepper
olive oil
4 salmon fillets (6 oz each)

Cook chorizo, green onions & garlic over medium-high heat, crumbling sausage =until it is no longer pink, 4-6 min. Drain

Reduce heat to medium. Add tomatoes, olives, and orange peel; stir to combine. Brush salmon fillets with olive oil & sprinkle with salt & pepper.

Grill salmon over medium heat until the fish just begins to flake easily with a fork. Top with chorizo mixture.
