"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Bring large pot of 1/2 chicken broth and 1/2 water to a boil.

Add chicken wings and boil for 8 to 10 minutes.

Remove and drain on a wire rack.

Optional: Season wings with favourite dry seasoning.

Bake wings on a baking sheet at 450 for 30 minutes ( I line baking sheet with parchment paper for easier clean up).

Turn wings over and cook for another 10 minutes.

Remove to a large bowl and toss with favourite sauce while still hot or toss with sauce in a frying pan on low.

Serve while hot.

Personal Notes:
We tend to use the frying pan to add sauce to wings - keeps them warmer and the sauce penetrates wings better.

Boiling helps reduce fat allowing wings to crisp up quicker in the oven - also not as messy!
