A mess of southern style, cheese grits (add sausage gravy to cheese grits)
1/4 c. olive oil
1 lb. 26-30 count shrimp, peeled and deveined
1 yellow onion, chopped
1 garlic clove, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
1 med. size tomato, chopped
freshly grated pepper

Directions:
Directions:
In a heated pan with olive oil, saute onion- green/red peppers until onion is glossy, add garlic and shrimp. When shrimp turn pink add chopped tomatoes. After about a minute or two, remove from heat and spoon over southern style cheese grits.

To make southern style cheese grits, follow directions on grits package to cook the grits, then at the end add cheese and sausage gravy to your delight. You don't want grits to be soupy.

This is my variation of the popular low-country shrimp & grits, I am sure there are many variations, so as with most of my recipes, have fun and be creative.
