5 lb of red potatoes
1 medium onion chopped
1- cups of chopped celery
cup of chopped green bell pepper
6 hard boiled eggs
3 cups mayonnaise
2-3 tablespoons of white vinegar
2 tablespoons yellow mustard
salt and pepper to taste

Directions:
Directions:
1. Boil and peel potatoes. Then cut into small cubes and place in large mixing bowl.
2. Add chopped vegetables and chopped hard boiled eggs.
3. Add mustard, mayonnaise, vinegar, salt/pepper and mix well.
You can garnish using one egg sliced thinly and place on top of salad. You can sprinkle with paprika. It's best to make 1 day before so all ingredients marinate well.
